Somebody in Bradenton Named a Cake After a Hurricane

Sweetly Sensitive Bakery is a Bradenton cottage shop baking gluten-free and dairy-free sweets, including a $40 Hurricane Cake you order with two days' notice. The baker started because her own kitchen had to change.

Sweetly Sensitive Bakery in Bradenton sells a $40 Hurricane Cake. Six-inch, double layer, chocolate or vanilla — you have to specify — fully gluten-free and dairy-free. The product page says: "Hunker down with a sweet hurricane cake!"

I have never once hunkered down with cake. I have hunkered down with chips, a flashlight and the vague hope that Publix still had ice. This bakery looked at Florida weather naming and decided dessert should participate. Correct.

How we got a bakery from a gallbladder

Owner Madison Robalewski writes that after her pregnancy, her health forced a hard turn: gluten-free and dairy-free, for her and then for the whole family. She noticed the local dessert options for people in that boat were thin. So she opened a licensed cottage kitchen that only bakes that way.

The tagline is "Indulge without Fear." Est. 2026. The About page went up May 20. This is not a chain discovering oat milk. This is one Bradenton kitchen deciding the allergy aisle should taste like an actual bakery.

What's on the board right now

From the products page (sixteen items when we checked Thursday afternoon):

Most bakes want one or two days' notice. The Hurricane Cake and the fancy cinnamon rolls were showing an Oct. 17 window when we looked. Plan ahead like you would for a storm, only this time you end up with frosting.

Cottage rules, Bradenton zip

It is a licensed cottage food operation with local delivery noted on the site, Bradenton 34212 in the footer. On Marketspread she is listed as an LLC with ServSafe and insurance, and she shows up under Main Street Events in Lakewood Ranch. No storefront walk-in. You order on the site, give the kitchen its lead time, and pick up or arrange delivery.

If your dessert list already includes Salt and Crumb's alfajores or Falcon Aerie's fall flight, add this one for the people who usually get the sad rice-flour brick at the party. Madison is baking the opposite of that.

Order at sweetlysensitivebakery.cottagecms.com. Follow along on Instagram @sweetlysensitivebakery. And if you get the Hurricane Cake, tell me whether you chose chocolate or vanilla. I have a theory about which one Florida picks under pressure.
