These Bagels Are Half the Size on Purpose. This Week They Taste Like French Toast.
Bitty Bagels is a Sarasota cottage bakery making hand-rolled bagels about half the usual size. This week's specialty is French Toast, and Friday they're at The Empanada Girl.
A regular bagel asks you to commit. You commit to the chew, the filling, the rest of your morning. Bitty Bagels looked at that situation and made them about half the size on purpose.
Their homepage says it straight: half a standard bagel, so they work for office meetings, brunch spreads, lunch boxes, or any moment when a full one is just way too much. I have had that moment. It was a Tuesday.
Half on purpose
This is a cottage food / micro bakery in Sarasota: pre-order, delivery or pop-ups only. No dine-in. They hand-roll the dough, cold-ferment it for 24 hours, water-boil it, then bake it on burlap-lined boards. Six ingredients: unbleached non-bromated bread flour, filtered water, yeast, salt, malt powder and malt syrup. No preservatives. No seed oils. The kind of ingredient list you can read without squinting.
The standing savory lineup is Plain, Everything, Garlic & Onion, Toasted Sesame and Salt. Then each week they rotate a sweet specialty. This week's drop, per the homepage: French Toast.
Past rotating sweets they've named include Espresso Chip, Cinnamon French Toast and Blueberry Lavender. So the sweet side is not a one-hit wonder. It is a whole mood.
Where to actually get them
Per the FAQ:
- Fridays: The Empanada Girl
- Sundays: Palma Coffee
You pick a pickup partner on their site, choose your bagels online, they bake in small batches timed to the order (never frozen, they say), and you show up. Delivery covers parts of north central Sarasota County, done in-house. The delivery map is partner-only, so check the order flow for your zone instead of hunting a public map that isn't there.
You can freeze them. The FAQ says thaw and crisp, or go straight from freezer into a 400-degree oven or toaster oven for 4 to 5 minutes. That is a Tuesday-morning plan if I have ever heard one.
Friday's pop-up
They also run a standing series at The Empanada Girl. Next up: Friday, Oct. 16, 9:30 a.m. to 12:30 p.m. at 4141 S. Tamiami Trail, Unit 13, Sarasota. Pre-order pickup on the Bitty site if you want to skip the delivery fee, or stop by and try them. The listing notes the café has a coffee bar. Correct priorities.
We already decoded Empanada Girl's crust stamps last weekend. Now the bagels are coming to the same counter. That is a strong Friday argument.
The Empanada Girl pop-up series continues on Oct. 23, Oct. 30 and Nov. 6 on the same calendar, same hours.
Also in the box
They've added Bitty Focaccia Squares: Maldon sea salt, rosemary, overnight slow ferment, four squares to a box. Same unbleached flour and all-natural pitch as the bagels. Full loaves on request.
And if you spend $25 or more at Solorzano's Pizza, The Empanada Girl or Salt Your Soul (not on a bagel order), upload the receipt and they'll send a 15% off code for your next bagel pre-order. Bangkok receipts get 20%, which they say helps Pacific Rim recover from their fire. Supporting the neighbors and getting cheaper bagels is the kind of local math I can do before coffee.
What people keep saying
The site's own testimonials lean hard on the New York comparison. One customer said they'd been searching for a bagel like this for almost 33 years. Another warned that the box disappears if you blink. A third called them small but mighty with coffee. I'm paraphrasing. The point is consistent: people who know bagels are treating these like the real thing, just shorter.
Follow @bittybagels on Instagram for the next drop, or start an order on the order page. If you're already deep in the cottage-bakery circuit, Mikayla's five-pickup sourdough is the other half of a very good weekend.
A full-size bagel is a commitment. A Bitty Bagel is a series of small, excellent decisions. This week, one of those decisions tastes like French toast.
